Ingredients
1 cup Nallasudar vermicelli
1 tablespoon oil or ghee
½ teaspoon mustard seeds
½ teaspoon cumin seeds
1 tablespoon chopped ginger
1 green chili (chopped)
1 onion (finely chopped)
1 carrot (chopped)
¼ cup green peas
1 ½ cups water
Salt to taste
Coriander leaves for garnish
Instructions
1.Roast the vermicelli in a dry pan until golden brown and set aside. (Skip this if using pre-roasted vermicelli).
2.Heat oil in a pan, add mustard seeds, cumin seeds, ginger, and green chili.
3.Add onions and sauté until soft. Add carrots, peas, and cook for a few minutes.
4.Pour in water, add salt, and bring to a boil.
5.Add roasted vermicelli and mix well. Cook until water is absorbed and vermicelli is soft.
6.Garnish with coriander leaves and serve hot!
Nallasudar Vermicelli Kheer (Semiya Payasam)

½ cup vermicelli
2 cups milk
½ cup sugar
2 tablespoons ghee
5-6 cashews
5-6 raisins
¼ teaspoon cardamom powder
Instructions
1.Heat ghee in a pan, roast cashews and raisins until golden, then set aside.
2.In the same pan, roast vermicelli until light golden.
3.Add milk and bring it to a boil. Let it simmer until the vermicelli softens.
4.Add sugar and mix well. Simmer for another 5 minutes.
5.Stir in cardamom powder and garnish with fried cashews and raisins.
6.Serve warm or chilled!

Add sliced onions and sauté until golden brown.

Cook on low heat for about 5 minutes until the vermicelli absorbs all the water and becomes soft.
5.Garnish and Serve:
Fluff up the biryani with a fork.

Pour in milk and let it simmer until the vermicelli softens.
Add grated jaggery and mix well. Let it cook for another 5 minutes.
3.Garnish & Serve:
Add cardamom powder and mix.

1 cup ragi vermicelli
½ cup grated coconut

2 tablespoons ghee

5-6 raisins
